Chickpea Tahini Salad

Chickpea Tahini Salad 




Since I am celebrating salad weeks and its coming to an end here is a very simply Chickpea Tahini Salad.

Makes 2 servings :-

I usually boil and keep aside chickpea cooked from 1 cup of dried chickpea and I used 6 tbsp cooked chickpea
2 cups of shredded iceberg lettuce
1 tbsp finely minced parsley
Tahini as per taste ( I used 2 tbsp as dressing)
Salt as per taste

Here is a quick tip on boiling chickpea. Till this year's January I have always soaked chickpeas and then cooked it. Then a blogger friend, Rhea shared an article which actually stated that chickpea cooked without soaking yields better flavours. A lot of people who are part of the food group said that ever since they had switched over to this no soak business of cooking chickpea they have not looked back. I tried the method out of curiosity and also because many people swear by it and as it turns out they were 100% correct. Chickpea cooked without pre-soaking it is much more tasty than when soaked and cooked. Please note that the dried chickpea used must not be too old and it does take a bit of extra time for cooking which is completely worth it. I usually use 1.5 cups of dried chickpea and simmer it for over an hour with 7 cups of water, a pinch of salt and a tiny pinch of bi-carbonate of soda which fastens the cooking process.

For the salad simply toss everything together and let the diner top his or her salad with the tahini sauce as dressing.

Chickpea Red Cabbage Salad





So eating healthy is a topic which is a dominant one in most people's minds. You can be eating it, recommending it, denouncing it but most adults are usually thinking about it at least once every 3 days. With the holidays and festivals it becomes mighty difficult to hold on to your healthy eating habit and everything goes into disarray and a little help is always very very helpful.

I have been on and off the eating healthy food from December, first there were the holidays and then the visit to my Mamma-in-law and then back to some healthy eating and then again there were a few celebrations with the other half and so it has been one see-saw ride and I am finally back home with a hopefully calm head and ready for some mild healthy diet. Now I personally do not like the word diet since it automatically conjures images of underfed stick-thin  sick people but the phrase 'following a healthy diet plan' is a huge hit with me because I am not above desires and so while I love my fresh salads and fruits and soups I might just reach out for that slice of pie once in a week but here is the problem. I speak from my personal experience and well what usually happens is once you go off track it becomes mighty difficult to come back to your senses. So the piece of pie leads to a piece of sachertorte and that leads to something else and then there is the period of panic when one realizes one has piled on a few kilos here and there and so when Claudia from My Continental Kitchen began an event of low calorie food I was relieved , you see  when there is a support group or reminder to eat healthy you are naturally  but conscious and for me once I start with a bit of participation it automatically becomes a habit and so I am grateful that the lovely lady has created the virtual event where everyone is welcome to share their ow calorie dishes (soups, salads and other low calorie dishes) and so come Monday and I was fully recovered from the welcome back to Calcutta Biriyani, Chocolate lava cake , pasta and decided on some filling yet healthy Chickpea salad.

Now before I go to the simple recipe here is a few tips from my experience which always helps me loose some kilos. Once you know you are on a healthy track you first need to stock up your pantry with. So fresh vegetables, fruits, legums , lean meat , fish but what one also must do is to think about the taste buds and so stock up on herbs, spices and any flavouring agent which helps a great deal. Imagine you have a few greens and carrots and lemon and you feel bored and are about to cook some deliciously unhealthy cheese toast but if you have a bit of parsley you can have an excellent salad in no time which reminds me that you need not give up on any ingredient when eating healthy. Controlling portions is the key factor for a successful healthy diet. So even if you do eat a single buttercookie and balance it with soups and salads for the main courses you are good to go but of course you must train yourself to stick to a single cookie or a tiny portion.



So coming back to my Chickpea red cabbage salad this one is easy and extremely healthy and delightfully delicious. I chose Chickpeas because a cup of boiled chickpea is nto only filling but has a mere 269 calories.

Serves 2

1/2 a cup of dried chickpea which should yield 2 cups of boiled chickpea
3 cups finely shredded red cabbage
1/4th cup finely chopped parsley
1 medium sized onion
20 almonds lightly toasted and halved but with the skin on since it contains some much needed nutrients
Salt and freshly ground pepper as per taste
2 heaped tsp feta

Dressing :
1 tbsp :2 tbsp -> lemon juice: extra virgin olive oil

Simply soak the chickpeas overnight and boil them in the morning. Let the chickpeas cool down and in the meantime shred the cabbage ,slice the onion and  chop the parsley and toast your almonds at preheated oven at 140 C for 5 minutes to 7 minutes of each side. Alternatively one might toast the almonds on a skillet on the gas-stove on medium flame but in that case one must keep a constant eye on them so that they do not burn one bit. Whisk the oil and lemon juice together to form a smooth silky emulsion. i use a fork which is good enough for the amount .

Mix everything together except the dressing  and add some crumbled feta on top. You have a delightfully healthy meal waiting for you.  Along side some grilled lean meat or fish this is perfectly healthy and wonderfully tasty.

Chole






I love Punjabi Food. Its robust, spicy and utterly delicious. To be fair living in Calcutta the options for real Punjabi food was scarce. There was of course this wonderful Dhaba in the middle of the city which churned out amazing dishes. The beauty of Calcutta is its diversity of food. Of course the diversity is best seen in and around Central Calcutta but nevertheless it is still there. You see each cuisine has an essence and after researching enough about Punjab's dishes and having had the good fortune of tasting some real Punjab da khana in a Punjabi home near Delhi I have come to the conclusion that original Punjabi food tastes its best when cooked in some desi ghee. I mean sure there are millions of recipes out there and you can always use health as an excuse but having used both the options I can definitely tell you that cooked in pure desi ghee the beauty of these dishes are simply at their best when they are cooked in that silky creamy ingredient.

If this cuisine were to be personified I would call it a beautiful voluptuous lady with glowing skin and dressed in a riot of colours.

If you have had the good luck to taste some delectable dishes in Punjab you would know that the use of spices is a bit more than in other cuisines of India. I like mine exactly that way and so here is my recipe for Chole collected from a dear old woman staying in the NCR region. Chickpeas are a store house of nutrition and cooked with all that spice it simply becomes divine.




Serves 4 to 6 people

2 cups of dried chickpea
2 medium sized red onions which are finely sliced
2.5 tsp finely minced garlic
2 tsp finely minced ginger
2 chopped tomatoes
3 to 4 green chilies finely chopped
Cinnamon (3/4th size of your little finger) crushed
3 black cardamom crushed
2 tsp cumin powder
3 tsp coriander
2 tsp chili powder
Pinch of turmeric
Salt as per taste
2 tbsp finely chopped coriander leaves
1 tsp Punjabi garam masala made at home for which you use (1 bay leaf, 2 to 3 green cardamom, 4 black cardamom, 1.5 inch cinnamon , 5 to 6 cloves and about 7 to 8  peppercorn , 1 tsp cumin seeds, 2 tsp coriander seeds , pinch of nutmeg and 2 blades of mace) . Dry roast and grind this
2.5 tbsp ghee
2 bay leaves
Juice of Half a lemon

Soak the chickpeas overnight and then boil it with 5 cups of water and 1 tsp ginger. Heat 2 tbsp ghee and saute the garlic and ginger taking care not to burn them. Now add the onions and fry till translucent. Add the bay leaf and crushed spices. Saute for a minute and add the tomatoes and Half the chopped chilies and stir continuously , mashing it from time to time to form a thick spicy paste and add the ground spices except the garam masala. Mix well stirring for a minute and add the boiled chole with the remaining water. Bring to a boil and salt, turmeric, chili powder and half the garam masala. Simmer till it reaches a thick gravy like consistency. Add the rest of the garam masala, the rest of the chopped chilies and coriander leaves and the juice of lemon. Serve hot with soft chapatis or paraunthes with onion rings and a wedge of lemon.
